In this workshop with Valerie Pearson, you will learn about how fermented foods can benefit our health and how you can incorporate them into your daily diet.
As fermentation has been used to preserve food for thousands of years, as it is a very simple, inexpensive, and effective method of preserving food, it is very popular. Fermentation of food is a process whereby bacteria break down carbohydrates and sugars, resulting in a fermented food product with a desired flavor, aroma, and texture as a result.
Fermentation can be done in a variety of ways: from the use of yeast, alcohol, acetic acid, mold, and lactic acid, which will result in the creation of different types of fermented products.
In this workshop, we will be focusing on lacto fermentation as the main topic of discussion.
The term “Lacto” refers to lactic acid, which is a type of acid that’s produced during the breakdown of sugar in an oxygen-free environment when sugars are broken down into simple sugars.
There was first evidence of lactic acid to be found in milk, which contains the sugar lactose, hence the name lactic acid is derived from this.
The following are a few examples of Lacto-fermented foods, such as milk, apple or kefir kefir, yogurts, sourdough bread, sauerkraut, kimchi, kombacha, and pickled vegetables.
The purpose of this workshop goes beyond just learning how to make some great pickles or sauerkraut? It’s more than that? By learning more about lacto fermentation, you will be able to improve your daily well-being and, at the same time, learn how to make a wide variety of fermented foods at home.
In this course, you will learn about how gut health and fermented foods are interconnected, and we will show you how just by changing a few simple things, you can improve the health of your gut and ensure that you have a healthy diet and a strong immune system.
Fermentation not only preserves food but also improves digestion.
We would like to remind you that this will be a demonstration-based session. The students will not be pickling during this session, but you will be given all the information you need to get started fermenting at home.
